Step into the wonderful world of wholegrains with a chicken, chickpea & bulgar wheat one pot wonder…

It’s interesting how much our tastes and eating habits change as we grow up. When we’re young, we eat what we’re given by parents, family & friends. We learn to love and loathe certain ingredients. We embrace or become wary of different cuisines by the reactions we see around us. We’re defined by the contents of our lunchboxes in the playground and our first-flat-fridges when friends come round for dinner.

My beloved mum who never met a vegetable she didn’t want to start a meaningful relationship with and who placed great importance during my and my sister’s childhoods on eating well balanced meals around a table together was also famous among my friends for always having a tin of mini chocolate bars in our cupboard and this approach of ‘everything in moderation’ is as deeply embedded in me from her as my love for Rhett Butler & strawberry milk.

Something that I’ve recently tried, subsequently loved and which I’m sure my pre-teen self might have wrinkled her nose at are wholegrains. I know, I know, you get that I like them because I talk about them a bit.

Okay a lot.

Alright, all the time but I can’t help it – there are so many benefits to these tiny nuggets of loveliness that I become impassioned on their behalf whenever they come up in conversation. Like Frodo Baggins or Oliver Twist, wholegrains might appear on the surface to be the quiet, unassuming underdog but overlook them at your peril because like our pointy-eared hobbit or Cockney, jazz handed orphan, there’s much more to them than meets the eye.

Simple, healthy & filling? Check.

An average cup packing a whopping 33% dietary fibre? Check.

Helping to reduce the risk of strokes, diabetes & heart disease? Check.

Wholegrains add bulk to a quick dinner meaning you feel full on less calorie intake, make the perfect next-day-leftovers lunch and greedily absorb whatever flavours you want to drizzle or drench them with and this one pot recipe is an excellent example of this.

An addictive new mapley-mustardy way to feast on sweet potato & kale fried wild rice…

Ok kids, hold onto your tummies and get ready for something exciting to hit your plate in great, greedy, overflowing spoonfuls because I’m gonna level with you here – this is one of the most delicious dishes I have ever made. I could literally eat it every day and not get sick of it and I’m so excited to share it with you because holy sauteed kale Batman, you are going to love it every bit as much as I do and you may even find yourself saying a little prayer of thanks that you took five minutes to read this post and expand your dinner repertoire.

The flavours are delicious – a completely addictive combination of sweet and savoury with balsamic tang nestling side by side with mustard heat and a gorgeous partnership of soft, sticky, caramelised sweet potato with earthy kale and nutty wild rice.

It’s simple. It’s quick. It’s flavourful and although you could easily serve it as a side to a beautiful piece of plump salmon or a protein packed grilled chicken breast, J and I have unashamedly taken the obsession to the level of eating whole platefuls of it as dinner…even as I write this, he’s sat beside me making yummy noises that are both endearing & understandable…

Pacific Catch; the perfect place to get your local stripes in San Francisco…

Right chaps, today’s post starts with me getting something off my chest, out in the open and laid bare for you all to see.

I simply can’t hold it back anymore…I have an admission to make.

I love San Francisco.

I do. I really really do. I heart it in all it’s blue-skied, green-grassed, natural-and-man-made glory.

When we put it on the roadtrip list, I thought I’d like it. I thought ‘hey yeah, San Fran looks pretty cool and sunshiney and pretty…woo hoo!’

Psssh, what did I know? Those words are pale and insipid compared to the compliments this city should be getting.

It’s gorgeous. It’s clean. It’s friendly. It’s full of happy, healthy, glowing, outdoorsy people but it also has libraries, museums & galleries for those who prefer to work up a sweat by the turning of pages or the viewing of world class exhibits.

You can eat pretty much anything you crave from a global menu of deliciousness; you can blend in with the locals at any number of coffee houses & cafes; you can string your camera round your neck and proudly proclaim your tourist proclivities at the wharf, the parks and the piers. You can get your photo taken with Yoda for heaven’s sake. Oh SF, you slay me.
